Wagashi (Japanese confectionery) has been widely enjoyed since the Edo period.
In Japan the four seasons are a big part of the culture. Did you know that there are wagashi unique to each season? The design, naming and materials used express the sense of each season, and you can feel the four seasons by looking at and eating wagashi.
We will invite an instructor from Kagurazaka Baikatei, a venerable confectionery shop, to hold a hands-on wagashi class. The master craftsman will teach you how to make your own and you can learn about traditional Japanese culture!
We will be making a ‘A Leaf of Ivy’ (蔦一葉), by wrapping bean paste balls in colored dough. After making the sweets, you can enjoy eating them while talking with each other and taking pictures!

Mr. Takeshi Inoue
Recognized as Excellent Master of Wagashi by the National Wagashi Association, Tokyo Meister by the Governor of Tokyo, and Master Craftsman by Shinjuku City. Part-time lecturer at Shinjuku Culinary Institute. Engaged in activities to increase the international recognition of Japanese confectionery, such as lectures in the U.K. for the Ministry of Foreign Affairs’s Japan Brand Program. Lectured on tea ceremony and Japanese confectionery and held classes on Japanese confectionery for students from Ochanomizu University Senior High School and Harvard University. He is also a recipient of the Imperial Household Agency’s official warrant. Received the title Sogo from the head of Urasenke Zabosai tea school and cooperated in the registration of wagashi as a national intangible cultural asset in 2023.
